With almost a little over one day to the over marketed holiday, Halloween my roommate and I decided to do a little pumpkin carving followed by the baking of pumpkin seeds and pumpkin bread. Although we are playing into the consumerism of Halloween by dressing up for the holiday and creating jack-o-lanterns we wanted to make sure we honored the fall harvest, thus by baking. My actual Halloween post will come on the actual day itself. Between the three of us (my roommate, our dog, and myself) we had three pumpkins that all needed to be washed and dried (two medium and one little.)
Next they were left were left to dry and after that I started gutting them (all three of them) while my roommate picked out the seeds (there were a lot.) Then we set out for carving, mind you no pumpkin kit was involved just tools we had (screw driver, stencil we made, and knives.)
My roommate made the spider while I did the Tinkerbell for mine (HUGE Disney fan) and a little owl for Fiona (our dog).

Then came the baking the seeds we just used EVOO (extra virgin olive oil) then some salt and pepper (they are so yummy!) in for 25 minutes (or until a light brown.)
The next part was all my roommate, I can cook however when it comes to baking I'm a flop. So she made pumpkin bread which was:
2 cups pumpkin guts blended with 2 caps of vanilla
3 cups sugar, .5 tbs cinnamon, 1/2 cup water, 1 cup veggie oil, 3.5 cups flour, 4 eggs, 2 tsp baking soda.
All at 350 degrees (F) for one hour.
